Everyone needs a break from time to time and a destination I love for a short break is Italy. This time, we decided to visit Tuscany. We travelled at the end of September which is a perfect time of year. Unlike home the weather is still ideal (with averages in the mid-20s) and we stayed for 5 days. After arriving in Pisa and leaving the bustling city behind, we felt an instant sense of escapism when we were driving through the iconic rolling hills and winelands of the Tuscany countryside. It took us about an hour to reach out hotel, but the journey was truly enjoyable. We stayed at the beautiful Villa San Paolo, a 4* hotel on the hills overlooking San Gimignano. The resort was beautifully appointed with a great sense of old Italian villa charm but with all the modern amenities we could need. There is a lovely pool and spa for travellers looking for a bit of R&R and a free car park for those, like us, looking to explore. The highlight of this hotel though is its main restaurant, Lampolla which offers incredible panoramic views of San Gimignano and the countryside. Although the menu is a little on the pricey side, I’d pay it every time for the view alone, but the cuisine is also very good. We started our exploration with the picturesque town of San Gimignano, just a 10-minute drive from the hotel. We parked in one of the larger secure parking areas (P4) rather than on the street and the walkway from here into the town. San Gimignano a wonderful mesh of small interconnecting streets filled with little shops, cafes and restaurants all eventually winding towards the two main piazza’s, Piazza del Cisterna and Piazza Duomo. The Torre Grosse dominates the centre of town and is one of the main attractions as you can climb to the top of its 218 steps for some incredible views of the town and surrounding countryside. After the hard work climbing to the top of the tower, we enjoyed a light lunch in the square and found the world champion gelato parlour, Gelateria Dondoli! I don’t think I have ever tasted better ice-cream, so the title is well deserved! Next, we went to Siena, a beautiful city with a rich history famed for its amazing cuisine, museums and the Palio (biennial horse race). The city is now a UNESCO World Heritage site. We parked by the train station which was ideal as from here you can take a series of escalators up to the city and when you see how steep it is, you’ll be glad you didn’t walk! The main square, Piazza Il Campo was exactly how I had imagined it. There was a myriad of wonderful restaurants, but our favourite was Manganelli. They had a great selection of authentic Italian dishes and all at reasonable prices and a great central location - well worth a visit, especially for the pizza! On our third day, we headed back to Siena as we wanted to catch a train station there to Florence. There is a direct service from Siena to Florence every hour and it is a great way to get into the heart of Florence without worrying about driving into the city and finding somewhere to park. Unlike San Gimignano and Siena, the buildings and plaza’s in Florence felt pristine because there were predominantly made of marble although there are still plenty of typical red brick architecture too. We visited the Basilica Santa Maria Nouvella, Piazza San Lorenzo, the cathedral at Santa Maria del Fiore and the Ponte Vecchio. The absolute highlight of the trip though as a traditional Italian Cooking Class and Winery tour that we booked with Tuscany Private Tour. It took us about 45 minutes to drive from San Gimignano to Castellina in Chianti where we met our guide, Daniella. She escorted us to the beautiful home of Silvie and Marco, who run La Piaggia, a local organic farm and winery. Silvie spent the morning teaching us how to make tiramisu, hand-made pasta and bruschetta which was an incredible experience and then we had the opportunity to walk around the vineyard and learn about the process of creating wine before finally heading back to their villa and having a wonderful lunch which we’d literally prepared earlier and sampling some of the wide variety of wines they produce. We stopped into the quaint town of Castellina in Chianti before heading back to the Villa San Paolo. On our final day, we said goodbye to our beautiful hotel and headed back to Pisa. And what trip to Pisa would be complete without visiting the Square of Miracles, home to one of the most iconic structures in the world, the Leaning Tower of Pisa. It was such a surreal experience climbing to the top, with its sloped marble staircase that feels like your falling down when climbing up and walking up when coming back down but if you have no issues with vertigo, it’s something that you’ve just got to experience. Then sadly, our adventure was over as we travelled from Pisa back home but bringing with us some wonderful memories, photos, newly developed cooking skills and a bottle of vino!

Our Honeymoon in Canada - Alberta

We flew from Toronto to Calgary to continue our journey through Canada. Our next destination, The Rockies! We arrived at the airport and headed to the Avis desk to collect our car and much to my husband's disappointment they were going to give us a Nissan. ‘Were' being the operative word. After some subtle negotiations, the lovely guy behind the desk offered us a complimentary upgrade to a full-size vehicle (as we were celebrating our honeymoon) and to be completely honest, it wasn't just a full-size car - it was a tank! Luckily the roads in Canada are larger than the vehicles! After spending a night with some friends in Calgary, we were off. Instead of taking the Trans Canada-Highway we followed the locals’ suggestions and took route 1A (the scenic route) toward Banff National Park and wow was it worth the diversion. From rolling plains to snow-capped mountains in a matter of miles, the scenery was stunning. We stopped for lunch in a lovely town called Canmore before reaching Banff National Park. After buying our entrance passes we drove to Banff itself where our next two nights would be at the beautiful Rimrock Resort. During our time in Banff I had a lovely western horse-riding trek, visited the Banff Hot Springs and took the cable car up to the top of Sulphur Mountain. We also enjoyed many of the wonderful walking trails in the area and spent some time in the town itself. Banff is such a picturesque place and has some fantastic places to shop and eat. Our favourite was The Keg Steakhouse although I did find myself veering to Buffalo Street where they had a chocolatier next door to the wine shop (my definition of heaven)! After Banff, we hit the road towards Lake Louise and our next two nights at the iconic Fairmont Chateaux Lake Louise. With the shore of the lake right outside, the scenery was simply stunning (especially from our Lake View Room, an upgrade I would highly recommend). There are a multitude of trails for hikers and you can hire canoes to paddle around the lake. We also found a few other beautiful areas to explore nearby including Moraine Lake, Emerald Lake, Johnston Canyon and went up the Lake Louise Gondola where we saw our first grizzly bears! The food offered by the hotel was also fantastic and the staff were lovely. When time came to leave Lake Louise we continued North via the beautiful Peyto Glacier viewpoint and then Athabasca Glacier in the Icefields Parkway. We took part in the Glacier adventure which was a fantastic experience. Journeying in an Ice Explorer (which made our tank look like a mini) across the icefields until we reached Athabasca glacier. En route our guide told us all about the history of the area and the glaciers. Getting the chance to walk out on surface and drink the water was fantastic. I also took the chance to walk across the Sky Walk which was pretty good although with it being so busy, sadly I didn't get to see much apart from the huge drop beneath my feet. We also saw some mountain sheep on our way back to the car. Once we arrived in Jasper, we were fortunate to spot even more wildlife, but we didn't realise quite how easy this would be over the next few days. Our hotel, the Fairmont Jasper Park Lodge was not how I expected - it was like a wilderness retreat and I absolutely loved it! Also on the shores of a lake it had so much to offer from tennis, walking trails, cycling and a variety of wellness and lake activities. It even has its own stables! We were really spoiled for choice - although my favourite was being able to do more western riding. At the main entrance on my hack I spotted a herd of Elk and when we were back on the road trying to find Maligne Lake we saw black bears! Word to the wise - the drive to Maligne is rather long but it’s a lovely stop when you get there. Medicine Lake is about the half way mark! Jasper would be our last stop in beautiful Alberta so on our final night we had a wonderful meal at the hotel and prepared for our long drive into British Columbia the next day. Overall, Alberta was one of the absolute highlights of our time in Canada. This stunning region has so much wildlife, history and adventure experiences that I only hope I can return, very soon!

The final leg of our Canadian honeymoon was to beautiful British Columbia where we planned to visit Clearwater, Vancouver and Knight's Inlet. After we left Jasper we started making our way to Clearwater, a overnight stop to break-up the long drive to Vancouver. To prove that we relied on our Sat Nav too much (you'd think we'd have learned after our experience in Niagara) we followed it without question to Clearwater, stopped for some fuel and then continued in the direction of our hotel, which was apparently still 2hrs away! Figuring that the river was impassable, we followed the set route until we came across a bridge and then began the long back-track to our hotel; the Alpine Meadows Lodge. We passed through some lovely countryside and quaint farmlands but after a while started to get concerned as civilisation seemed to disappear and the lodge was still no-where in sight. Road blocks were caused by a group of loose cows and the only onlookers to our route were some horses and further down the road a grizzly bear. The lovely tarmacked roads soon gave way to gravel paths which didn't feel particularly promising either. We started to tease each other as the journey started to feel like a scene out of The Shining! After another hour, there was still no sign of Alpine Meadows and so of course there was more horror movie banter but deep down I was beginning to wonder if we'd ever find the place and if we did what it would be like and whether or not we'd be on the menu! Of course once we actually got there, the place was beautiful and the people were lovely. It turns out, had we ignored the Sat Nav and followed the road signs right outside the petrol station we would have found a little river crossing service and the hotel was only a 15 minute drive after away from there. We had a lovely meal at the lodge's restaurant and rested up in order to continue our journey (by going the right way back into town) the next day. Then it was onwards to Vancouver. Once we arrived in the city, we said a fond farewell to the tank (after getting lost in Chinatown) and went for a walk to find our hotel, the Fairmont Waterfront. The location of the hotel was fantastic and the waterfront area was beautiful. We visited Granville Market and Vancouver Aquarium and even had a photo op with the Canadian Mounted Police on patrol near Stanley Park! There were a myriad of places to stop for a bite to eat along the waterfront but we found a lovely little place right on the edge of the harbour so we could see the seaplanes coming and going. Sadly there wasn't enough time to hop on a whale watching tour but it gives us a great excuse to go back! After a few days in the city, it was time to head to Knight's Inlet. Knight's Inlet was such a highlight I have written a separate blog all about it. Check out 'Truly Wild' in my blogs for all the details. After returning from the lodge, we spent one more night at the Fairmont Waterfront and had a lovely meal (and cocktails) at their restaurant ARC before sadly having to head home. I surprised my husband with an upgrade to Premium Economy for the flight back (which on Air Canada was very spacious) but it was still difficult for us both to board that plane! We could have easily stayed as there was so much more to see but that in itself is a testament to this beautiful country, it's wonderful people and the incredible experiences we had during our time here. Our Honeymoon in Canada - Ontario

My husband and I both had one place at the top of our bucket list and it was Canada. So when it came to choosing our honeymoon destination, it was a pretty easy choice. We spent a wonderful 3 weeks travelling across the country and we started in Ontario visiting Toronto and Niagara Falls. We flew from London Heathrow to Toronto with Air Canada and was pleasantly surprised with the comfort even in Economy and then upon arrival, grabbed a taxi to check into our hotel, the Eaton Chelsea Hotel. The city itself was really unique and the visitor map is divided into zones. These zones include 'Old Town', 'The Entertainment District', 'The Waterfront', Downtown Yonge' and more and help visitors to find specific attractions that may be of interest like St Lawrence Market or the CN Tower. Now to say my poor husband isn't a fan of heights, he still came with me all the way up to the Look Out Level - 1136ft up! We also celebrated my birthday at the revolving restaurant in the CN Tower. In my opinion this was one of the greatest experiences because our entrance to the CN Tower was included in the meal cost and meant that we got to enjoy some fine dining with the most breath-taking views as the restaurant slowly revolved giving us 360 degree views of the city and beyond. It's almost essential to pre-book this experience but with a very user-friendly website, this was easily done. We also took a harbour cruise to see the islands just off the city's harbour. The guide was incredibly knowledgeable and it was lovely to see just how different life can be. You can choose the metropolitan city life or locals can buy a boat and live afloat but within 30minutes of all the cities facilities. After our stay in the city, we hired a car and drove towards Niagara to see Niagara Falls. Once you are away from the city limits, you hit Ontario's wine lands - fields as far as the eye can see growing grapes and every other road sign pointed to a winery! I was in heaven! Once we got closer to Niagara, we made a slight error, and ended up crossing the one-way bridge (that our Sat Nav had indicated as the way to the 'Destination Niagara' visitor centre) and ended up and the U.S. Border Control! Not quite what we had in mind. The agents there weren't best pleased with us but it was clearly a mistake that visitors had made in the past. We explained we had no intention to enter the United States and wanted to return to Canada. Sadly just putting the car in reverse was not an option. After a few suspicious stares and a short wait in their holding area, we were allowed to turn around and re-join the Canadians (phew)! The border control agent on the Canadian side was much friendlier and with a quick check of our passports we were through. Following that and a quick argument with the Sat Nav, we found the Niagara visitor centre (called 'Table Rock Welcome' for anyone planning a trip!) and arrived at one of the world's most infamous natural wonders, Niagara Falls. To finally see the falls after nearly 18 months of dreaming and looking at photos was incredible. We did all of the local tours but my absolute favourite was - as they rightly call it "The Experience You'll Never Forget", the Hornblower Cruise. Now most people know this mini-cruise as the "Maid of the Mist" and they aren't wrong, just slightly out of date. The Maid of the Mist formally ran on both sides of the border but is now only on the U.S. side; with Hornblower cruises now operating on the Canadian side. It is still the same experience but on newer more modern vessels but being completely honest, it's where it takes you that makes the experience - right into the mist of the thundering falls. Prepare to get a bit soggy! But don't worry, there are a few lovely cafes where you can dry off afterwards. After we'd see all there was to see, we headed out of Niagara 9sacrificing the Niagara view room at one of the local hotels) for the beautiful town of Niagara-on-the-lake and given the chance I would do it again. The town was stunning, like stepping back in time and although a little quiet because their season tends to kick off a little later in the summer, the hospitality and the local restaurant we went to was fantastic and our hotel, the Pillar & Post in was wonderful. I hope to return in the near future to see more of Ontario.

Truly Wild

If there was ever an experience that will take your breath away and get you up-close and personal with the best of Canada's wildlife - this is it! Located about 50 air miles north of Campbell River, is the wild and remote area known as Knight's Inlet. I visited Knight's Inlet Lodge with my husband on my honeymoon in June 2016 and although it was just 2 days of our 3 week adventure in Canada, it was easily one of the most memorable stays of my life. Starting at Campbell River, a transfer took us to the sea plane port to get us on our way. Having never been on a sea plane before, it is quite surreal when you realise that the take off strip is water - but what an experience! The flight travels over some stunning scenery in British Columbia before landing with a splash on the estuary at Knight's Inlet. The pilot even offered to let me sit up front as he didn't have a co-pilot. I thought better of it in case I touched something and caused the plane to crash, although I can highly recommend a plane that can land on water! We were met by the incredibly knowledgeable and friendly staff of the lodge and shown to our cabin style room on what would be our floating home for the next 2 days. After we were settled, we had the chance to join the estuary river boat tour in hopes of seeing bears. And we did... Nine... Nine bears in one hour! Our guide told us all about the land and the bears who they had named and been observing for years. The bears are by no means enclosed; they choose to come back inlet, especially at this time of year to raise their young. They know that it is a safe and protected area - although they have to put up with a photo or three. But the lodge is blessed with so much more; from bald eagles to an abundance of marine life including dolphins and even whales. We were lucky enough to see dolphins on the inlet cruise tour to Rainbow falls that we did the next day. Our stay at Knight's Inlet was on a full board basis and dining was like being at the family dinner table, chatting with all the other guests about their experiences and the chance to compare photos. They also had a little gift shop with some wonderful shots of the area and of the wildlife. The owner of the lodge also supports a local program called "stop the hunt" where by they commit to a financial settlement with the local guide-outfitter to pay for his bear tags - i.e., paying them not to hunt! For our last excursion, we decided to jump in kayaks and get a little closer to the shore. We were able to see Bella and her cubs again as well another resident bear called Lenore who was happily resting in the sunshine whilst her cub was learning how to find her own food by scavenging around the rocks. Our stay at this wonderful lodge and the experience getting there and back is one I can highly recommend!

She was quick at responding to me, and although I felt like I was tricky and hard to please, she didn’t make me feel like that and nothing seemed too much trouble for her.
